Serves 4:
1kg chicken pieces
1 red onion, diced
5 garlic cloves, crushed
1 litre chicken broth
2 tablespoons fresh ginger, cut into slices or strips
4 tablespoons oil
2 green peppers
½ cup Moringa leaves or 1 tablespoon moringa powder
Salt and Pepper.
Preparation:
In a large pot, heat the oil, fry onion, garlic, ginger and chicken pieces.
Add broth and simmer for about 20 minutes, until chicken is almost done.
Add peppers and simmer for another 5 minutes, don’t over cook.
Remove pot from heat and add Moringa leaves. Leave for about 30 minutes to allow Moringa to merge with dish, season with Salt and Pepper and serve with side dish of Bulgar wheat or rice.
