Serves 4
Ingredients:
- 1 Tablespoon Olive Oil
- 1 Medium red onion, chopped
- 2 garlic cloves, minced
- 1 2.5cm ginger knob, peeled and grated
- 1 can pure coconut milk
- 1 cup green beans, trimmed and chopped
- 1 long red chili, chopped
- 1 medium red bell pepper, deseeded and chopped
- 4 chicken breasts, cut into 2.5 cm cubes
- 3 tablespoons chopped fresh coriander
- 1 lime, juiced
- Salt and Black pepper to taste
- 2 tablespoons Moringa Powder.
Method:
- Heat up the olive oil in a medium pot over medium heat and sauté the onion until softened, approximately 3 minutes. Add the garlic and ginger and keep cooking until fragrant, about another minute.
- Mix in the coconut milk and allow boiling.
- Stir in the green beans, red chili, bell pepper, chicken and season with the coriander, lime, salt, and black pepper, simmer for 5 minutes or until the chicken is cooked through.
- Mix in the moringa powder, simmer for another 1 to 2 minutes, and adjust the taste with salt and black pepper.
- Dish the food into serving bowls and serve with rice or bulgur wheat as that healthier option.
